ABOUT UJI MATCHA

Why Uji

Matcha begins as tencha. The bushes are shaded for several weeks before picking, which holds back bitterness and builds the sweetness and deep green colour that matcha is known for. The leaves are steamed, dried without rolling, then stone-milled into powder.

Uji in Kyoto has been doing this for centuries, and the difference shows in the cup. Much of what is sold abroad as “Uji matcha” is blended from several origins. We contract directly with farms, so we can tell you where a lot came from and which grade it is.

Much of the matcha sold as “Uji” is blended. We tell you the farm and the grade.

Colour, aroma and bitterness change completely with the grade. We select from how you will serve it.

We supply from small lots, so you can test a grade before committing.

LINEUP

Three grades

Grade is chosen from the finished product, not from a price list. Tell us what you are making and we will narrow it down, then send samples so you can taste it in your own recipe.

Koicha grade

Tea ceremony, high-end tea rooms

The top leaf, stone-milled. Deep green, thick body, lasting sweetness with almost no harshness.

Usucha grade

Cafes, matcha lattes, bottled drinks

Holds its colour and aroma through milk and ice. The workhorse grade for drinks.

Culinary grade

Confectionery, baking, ice cream

Stands up to heat and sugar without going brown. Priced for volume use.

Prices are quoted against your requirement. Grade, harvest and volume all move the number, so a published price would not tell you much.

Do you ship outside Japan?

Yes. We handle export documentation. Tell us the destination country and we will confirm the requirements before you order.

What is the minimum order?

We accept small lots. Tell us the quantity you have in mind and we will quote it.

Can we get samples first?

Yes. We recommend testing in your own recipe before deciding on a grade.

Can you make a product for our brand?

Yes. We develop matcha confectionery and sweets under OEM arrangements.

Why is the price not published?

Matcha pricing moves with grade, harvest and volume. We quote against your actual requirement rather than post a number that would not apply to you.

Can we visit the farm?

Yes, by appointment. Seeing the shaded fields explains the grades better than any description.
